a. What are pastries?

a. What is Group 3 occupational safety training?
- Occupational safety training for Group 3 consists of sessions to equip workers with awareness on how to prevent work accidents.
- The occupational safety training course will help workers recognize and avoid dangers, limiting the risks of work accidents during work.

b. Training duration
Initial safety training duration
- Total training duration is at least 24 hours, including examination time.
- 8 hours of theoretical study on the system of policies and laws on occupational safety and health
- 8 hours of theoretical study on basic knowledge of occupational safety and health
- 4 hours of theoretical study on specialized training content
- 2 hours of practical study on specialized training content
- 2 hours of theoretical examination at the end of the training course
The safety training center will distribute the time into multiple training sessions depending on the time arrangement for employees. However, there are usually 6 training sessions, and the course will take place over 3 days, provided that the manufacturing enterprise can arrange for continuous study time.
Periodic safety training duration
- Before the occupational safety card expires, workers who wish to have it reissued must undergo a periodic occupational safety training course, with the periodic safety training duration being at least 50% of the initial safety training duration.
Explanation: The total periodic occupational safety training duration is at least 12 hours, including examination time. After completing the periodic training course and passing the required test, the worker will be reissued or have their occupational safety card renewed.

d. Occupational safety card
After completing the occupational safety training course and passing the examination, the worker will be issued an occupational safety card (in practice often called a Group 3 occupational safety certificate).
The Group 3 safety card will clearly show information such as: full name, date of birth, specific job, and working environment. It will also include the training duration, a red seal, and a signature confirming the completion of the training course.
According to the regulations on issuing safety cards as specified in clause 2 article 24 of decree 44/2016/ND-CP, there are two cases:
- In the case where the employer and the employee have an employment contract with each other, the employer must sign, stamp, and affix a seal on the safety card for the trainee belonging to Group 3 after they have completed the training course from the occupational safety training unit and passed the examination.
- In the case of freelancers, seasonal workers, who do not have an employment contract, the training unit must sign, stamp, and affix a seal on the safety card for the worker after they have completed the training course from the occupational safety training unit and passed the examination.

3. Identifying hazards in pastry manufacturing

- Some chemicals used in pastry manufacturing such as flavorings, colorants, and preservatives can be dangerous to workers if they come into direct contact with the skin or are inhaled. Additionally, if used incorrectly, chemicals can affect product quality and the food safety of the pastries.
- Working in an environment with dust, noise, and high work pressure can cause health problems for workers such as stress, fatigue, headaches, and work accidents.
- Products that do not meet quality standards or are contaminated can be harmful to consumers’ health. This can happen if food safety and hygiene procedures are not followed correctly during the pastry manufacturing process.

- Accidents from using machinery: Includes accidents due to machine malfunctions such as damage or overload, hitting obstacles, or collisions with employees during use.
- Accidents from cutting tools: When working with cutting tools to slice pastries, workers can cut their hands or fingers. This is a common type of accident in the food industry.
- Fire and explosion accidents: Flammable materials and pastry manufacturing processes often involve a mixture of chemicals. This creates a risk of fire and explosion, especially when safety regulations are not complied with.
- Slip and fall accidents: Due to the wet, greasy, or slippery working environment, slipping, falling, and suffering bone fractures or injuries are not uncommon.
- Electric shock accidents: The machinery involved in pastry manufacturing is at risk of electrical leakage or due to operator error leading to electric shock.
